Well my son and I just got back from our Bryson Pig hunt. My goal was to get my son Chris (13) his second hog. We got to Bryson's on Thursday afternoon and met up with Deedy and Karin for and evening hunt. Switch was already there with his friend Chris, who is a gourmet cook by the way, we got our camo clothes on and headed out by 6:00 pm. Deedy took Chris and I and we hiked a half mile or so up a steep grade and began testing the wind for direction Deedy said that the pigs had been using a specific canyon to access feed in the area. We finally decided on a spot and Deedy began coaching Chris on how it might go down if everything went as planned. She pointed to a clump of grass about a foot in circumference on the dirt immediately across from us and said they might come right through that area

The area had been well scouted by Karin for the last several days. At about 8:00 pm my son whispered, "dad what are those" and I looked about a half mile away and saw a pack of 40 plus pigs moving across a field to our left. Amazingly they didn't take too long to cover the distance and before they got to us we lost sight of them in a draw to our left. They suddenly appeared coming through a barbed wire fence about 80 yards to our left. As they began to file past us at about 50 yards Deedy indicated to Chris to take the last hog in the pack. With that Deedy raised her hand quickly which caught the pigs attention and it paused (about two feet from the clump of grass Deedy had used for a possible marker) to look for about 2 seconds Chris hit her behind the shoulder but she began to run up a steep hill and I fired off hand and missed once to get her down but she kept going. It was obvious Chris had hit her in the right spot but as she got to the top of the hill I hit her in the rear end and took out the spine. When we got there we realized she was hit in the heart on Chris' shot and was running on adrenalin. My son was pretty excited and so was I.

We spent the rest of the trip scouting with Deedy but the pigs were acting pretty nocturnal. Switch and Chris hunted some spots pretty hard but no luck. As a side note I can't remember the last time I saw so many deer including some great bucks. Should be an amazing deer season up there.

For those of you who haven't been to Bryson's the cabins are incredible and Deedy and Karin work very hard to get you on animals. All in all we had some great food, thanks Chris, and some laughs and although I can't say we got much sleep since it's up early and out late it is always a pleasure to spend time with Deedy at Bryson's. Thanks Deedy for taking care of my boy and for making life long memories.

Yeah they got a great setup up yonder at Brysons, I never knew women hunted that hard, just kidding, they hunt as hard as anyone out there.

The pig weighed in at 147 lbs and was a dry sow. We are having ribs tomorrow night and I think she gonna be a good eater.

By the way I think a lot of folks don't keep the ribs but to me they are the best part of the pig. I use a pork rub on them before boiling them for two hours. Then I pull them out and put them on the BBQ for about 15 minutes then put on the BBQ sauce and another 10 or 15 minutes on the grill and they are really tender and tasty.

Yeah they hunt pretty hard, Deedy really gets in the brush and pushes hard on those pigs.

Great job everybody on the pig

Boil ribs for 2 hours? Use the dry rub and smoke or slow cook for 2-3 hours. More flavor, never tough and really moist.

I always eat the ribs as well, my butcher has done German Spare ribs once for me, they were good, but usually just cut them out and slow cook on the smoker for a few hours, I usually barely sear them to start with to seal them a bit, then cook, I don't do wet sauces on ribs just a dry rub and they rock, fun to eat with my little boys, 1 1/2 and 3 1/2.

Congrats again you your son, hog huntin is as fun as anything you can do with your kids, and for the kids with their dad, my dad is in his mid fifties and we have as much fun hunting now as ever, hogs are responsible for mre family fun than anything I can think of.

Great Job, Great Memeories,
Deedy and Karin are great, Bryson is a hit and I can't wait to go up again later this year.
I put in for a moneterrey either sex tag as 1st choice but its hard to get.
I saw a lot of deer up there too, and a lot of turkeys and hogs.
Two fishing lakes its a paradise.

Thank you all for coming. We had a really great time - (as usual) with you guys. Augenmike's son Chris1 (we have two Chris's in this story so I'll name Augenmike's son Chris1) did an awesome job on his kill- your young man is like a machine. Hit his piggie right in the heart, took the shot right on the money & with perfect timing. Within a split second, Chris1 had another round in the chamber and was ready to shoot again if needed, never taking the cross-hairs off the pig. SWEET. The hogs did go a little nocturnal on us, but we all had a great time. I needed another evening hunt with Switch's buddy Chris2 to get him a hog, but alas, he needed to stay married and had to go home. The first night, Chris2s' batteries died on his own personal radio, and I lost tract of Switch & Chris2 in the field the first night or they woulda had piggies too. They did have shots but weren't sure which hogs were wet and opted not to shoot without an OK from me (thank you very much) - & I couldn't find Chris2 & Switch. It was pretty funny - I called and called and there was no-one there. Finally Karin & I started singing songs and telling jokes on the radios but they really couldn't hear us- I'm sure Switch & Chris2 would have cracked up 'cause we told some pretty good jokes. Chris2 made sure his batteries were charged the next morning. Then my pigs decided not to co-operate for the next day and a half at all. Little 's
Chris2 made the best lamb chops I've ever had, killer - he sears them and then he seals them with a brushed on sauce and then turns the heat down. Absolutely the best.

P.S. Deerslam- ask your butcher for me why he thinks the ribs are prone to bacteria? I've never heard of that - but I'd love to know why he thinks that- Im just wondering cause we've always eaten the ribs- . Let me know ok? Might have something to do with the way the meat got handled on him once or something is all I can think of.

Mike, I don't know about the bacteria, could explain my son having one eye in the middle of his forehead though.

I do boil them for at least 1 1/2 to 2 hours after dry rubbing them so that should deal with any issues. In any event they are really good.

What can I say? another great trip to Bryson. Thanks again to Deedy and Karin for working so hard. My friend Chris had a blast.

He had pigs in his sights on the first afternoon hunt, but held the shot because he wasn't sure if the pigs were wet or of size. We watched them for 30-seconds and then they scooted over the next hill. The next group came by and looked to be two sows and dozens of piglets, so he held on those as well.

The heat sent them nocturnal, but just barely. We had a great time and Chris plans to head back for the deer season.

I went out and did a little calling on the last morning and had a coyote in my sights, but I was unclear on the property boundaries, so I held...turns out it was Deedy's property...oh well.

Again, thanks to Deedy and the crew. As always, we had a great time.

I miss everyone up there too! It's a beautiful place with really great people.
I can't wait to come up again.
I hope all is well.

P.S.
Those ribs from both pigs are history.
H2O smoker a little over 24 hours.
My homemade BBQ recipe the last 2 hours. Big Hit.
We ate one set and 2 weekends later they were back on the menu by special request.

Smoked and vacuum packed the rest except for a ham we cooked right away in the oven.
