Hi,
As you might know by previous posts I am in need of some new hunting guns. Does anybody own a 700 SPS, and what are your opinions on them? I absolutely love the look, but are they what they are worth? Also what kind of scope would you mount on one of these?

Beauty is in the eye of the beholder... If you love it, then that is all that is needed, as most of this is personal taste.
Anyway, like buying any product, the biggest thing is to just shop around & compare. Remington always makes a fine product & is normally worth the money. But so are many other brands. Price usually tells the story, again as with most things. So yes, I am sure the sps is worth the $$ (even though you did not mention the price).
As far as scopes go, you did not mention what you intend to use the rifle for. If it's mostly going to be used for predators, then a 3x9 is best IMHO. For varmints, then more magnification is the best bet, like a 4-14 or on that order.
Zeiss & Leupold cannot be beat, again in my opinion, which is worth exactly what you paid for it. LOL And I've owned lots of various brands over many yrs. Also, it is better to spend more $$ on a scope & less for the rifle than the other way around. IF you have to cut costs somewhere.
