I got some carne asada marinade from a barbque at work and was planning on putting some elk and venison in it but I was told that it was not safe to do since it had already been used on the carne asada at the bbq. So is it safe or not? I definately don't want to get sick.

If it was already used i.e. they put the brush/mop actually in the sauce and then put it on the meat, then it is a sure bet that is not safe.

The bacteria that was on the meat has had too much time to incubate in the sauce and no matter how carefully someone prepares meat there is always some bacteria. The heat from the BBQ kills the bacteria on the meat ###but what is left in the sauce has gone on a feeding frenzy since then.

Best case scenario: you spend the weekend in the bathroom, venting from both ends.

I am sorry, I missed the part that it was a marinade the first time I read your post.

DEFINATELY, if it has touched meat, DO NOT USE IT.

By the way, what is asada marinade? Always looking for new recipes.

I have no clue what the marinade is made out of. All I know is that if you like mexican food it's AWESOME!!! Thinking about makes me hungry. I'll try and find out from the guys at work.

Couple recipes I found for Asasa Marinade


Carne Asada Marinade
This simple garlic and olive oil rub is a great way to marinate beef
### steaks before grilling. Prep Time: approx. 5 Minutes. Ready in: approx. 2
### Hours 5 Minutes. Makes 6 servings.

3/4 cup extra virgin olive oil
4 tablespoons fresh lemon juice
2 cloves garlic, finely chopped
salt and pepper to taste


Directions
1 In a medium bowl, mix extra virgin olive oil, fresh lemon juice, garlic, salt and pepper.
### Place beef into the mixture. Rub mixture into the meat. Cover bowl and allow beef to marinate in
### the refrigerator at least 2 hours before grilling as desired.

My best friend in Chiapas sells carne asada from her living room every night. I have helped her prepare it many times. Easy and delicious.

2.2 lbs. thinly sliced lean beef

1 small bottle Worchestershire sauce
14 limes (sqeeze juice onto the
meat,and toss in the rinds as well)
2 T. cooking oil
1 medium white onion, sliced
4 large garlic cloves, smashed & peeled
salt to taste (I use about 1 tsp.)

Allow the meat to marinate at room temperature for at least 6 hours, turning it about once an hour so that all the pieces are well-coated. Shake off all the marinade and discard. Grill meat for a few minutes on each side over a hot charcoal fire until brown and well done. The end result should be rather chewy but very tasty. Her faithful customers tear them apart with their fingers and roll the meat into warm corn tortillas, along with refried beans, a side salad, crumbled queso, and homemade salsa roja. ¡Buen provecho!

Great! Sounds delicious.

I'll have to try that on some mule deer I got in the freezer.
