Here is a great one. ###Works well with venison too but I prefer antelope. ###Soak steak in milk overnight. ###Take out, pat dry and pound it with a tenderizing hammer. ###If you don't have one of these, poke the hell out of it with a fork a whole bunch of times (this is the secret to a tender steak). ###Give it a dry rub with some cajun seasoning or what ever you like. ###Dredge the steak in a whipped egg and then shake it in a bag of half flour and half italian bread crumbs. ###Then fry in hot oil. ###Peanut oil is best but vegtable or olive will work too. ###Serve this on a bed of garlic mashed potatos and pour your favorite gravy over the top. ###Cant beat it.

most antelope that ive tasted were taken on the run. ###wasnt the best meat. ###now it goes straight to jerky.

The tricky part about antelope is getting the meat off and in a cooler as fast as you can. ###When I shoot them I don't worry about cutting it or hanging it. ###I have a cooler full of ice handy and start cutting away immediately. ###
Here is a nice recipe you might like. ###
Sweet and Sour Antelope
1 pound ###Antelope
2 tablespoon Butter
¼ tsp Mixed peppercorns
1 tablespoon Shallot
1 tablespoon Garlic
1 tablespoon Ginger
1 cup Mixed bell peppers
1 tablespoon Fresh tomato paste (see recipe)
½ tsp Fresh thyme
¼ tsp Greek oregano
½ cup Red onion
2 tablespoon Red wine vinegar
2 tsp Light soy sauce
3 tablespoon Marionberry jam
½ cup Green onion
1 cup Bok choy
1/3 cup Beef stock
Cut meat into 1/2 in. strips, sauté over high heat in clarified butter two to three minutes. Add mixed peppercorns, shallots, garlic, ginger, fresh tomato paste, mixed bell peppers, red onion, thyme, Greek oregano and sauté for an additional two minutes. Add cup beef stock, soy sauce, red wine vinegar, marionberry jam, bring to a simmer add the bok choy and green onions. Salt and pepper to taste and serve over white rice.
